 What time is it?
It's STONE CRAB TIME!

AVAILABLE AT DINNER ONLY,
AND IN SEASON UNTIL MAY!

These delectable crab claws are native to Florida and the Gulf of Mexico, and feed on oysters, small mollusks and other crustacians. Because its favorite foods often live in a shell, too, the stone crab's shell is hard enough to crack these open.

When a crabber takes a claw from a stone crab, the hardy crustacean will just grow another one. Once harvested, the crabmeat must be cooked at once, so that takes place on the boat. For this reason, stone crab claws are usually served chilled, and not hot. Heating the claws is actually cooking them for a second time. This makes the meat stick to the shell, and believe us when we tell you that you won't want to lose even a morsel of this sweet delicacy.
